Project 365: Nov17-Dec13

I must say, even though I barely managed to keep up, I'm sort of sad to see we're reaching the end of the year in pictures. ... it was tough keeping up though, but fun beyond compare!!

Project 365 is a photo a day taken and posted at the end of each week, though in my case, it's been a photo when I remember to take one and posted when I finally kick myself in the butt to get moving.  Project 365 is hosted by Make music from your yeart to the Lord and I would strongly recommend joining in this fun event next year if you're up for a real challenge!!

Alrighty then, I guess I will pick up where I left off the last time. 

Thursday November 17

I had a good laugh when I spotted this sign but now that I think of it, I should have taken a video of it...  the colour sign was blinking so fast.  First off, the sign says "eye exams available on site", but let me say that since the sign was blinking really fast, you'd definately need an eye exam after staring at it for a couple seconds.  sigh, I should have taken a video of it!

Tuesday November 22

Had some frost over night.  Had to get out the scraper for the car window.

Wednesday November 23

SNOW!!!  We got snow.  Oh no! NO NOOOOO!!!!!!!

The trees were erected in the middle of the street.  Not lit up at the time of this photo because they'd just been put there. 


Thursday November 24
The roads were slippery.  The snow is still there too.

Spotted the first mashmallow-mobile of the season. 

Drove down a street and stopped to take a photo of Christmas lights!!!  In November??

Saturday November 26

Had to go downtown to buy winter boots and get a head start on Christmas Shopping.  The bakery shop had a lovely tree just outside their window.  Lovely!

Spotted another tree at the bottom of the stairs.  I was following the cinnamon smell and stumbled on this one hee hee hee

Difficult to see but it's blue and silver!  The blue tree on the street post.  I believe it lights up at night but I'm not sure if it's with white or blue lights. 

Mall decor just outside the shoe shop where I bought winter boots.  Took this photo seconds after I called my Mom to tell her I got boots so she can stop worrying that my toes will freeze up and fall off.

Thursday December 1

Manger scene painting above a church.  Last year's one was better in my opinion.  This years one looks like a family on the beach.  Not making fun of it, just saying....

Christmas tree lot opened up in the spot where the outdoor market was this summer.  And as you can see... the snow is gone... bye bye! :-)

Put up the tree.... this is it naked.  It eventually got decorated but took quite a while since I was also baking fruit cake.

Sunday December 4

Our tree this year, is adorned with many size red poinsettias and a handful of whit ones too, gold beads and gold metalic ribbon.

Wednesday December 7

The trees in the middle of the street are now lit!  This photo doesn't do them justice in the least!  I could have stood in the middle of the road to take the photo but I would have gotten run over!

Sunday December 11

Mom made biscuits!  mmmm these are sooo good sooo soft... made with extra love!  She also made fudge!  Yummy.  I munched on these lovelies while I baked more fruit cake... this year I baked 4 cakes because everyone wanted a whole cake for their greedy selves LOL.

Tuesday December 13

Got out my cookie book!  I've assembled a binder with cookie recipes that are easy to make and tasty to eat!  Time to get baking for all those kids of mine.

First ones out of the oven are chocolate chip!  Only 10 are here, I ate 2... shhh...

Chocolate Coconut Thumbprint Cookies

Stumbled onto another delicious cookie recipe that just begged to be shared!   I've been compiling some quick and easy recipes for Christmas cookies I'll be baking for family kids but this recipe I'll need to adjust out the pecan since I'll be baking nut-free for allergies.

Chocolate-Coconut Thumbprint Cookies Recipe


1 roll (16.5 oz) Pillsbury® refrigerated sugar cookies
4 oz sweet baking chocolate, melted, cooled 10 minutes
2 tablespoons all-purpose flour
1/2 cup flaked coconut
1/2 cup coconut pecan ready-to-spread frosting
2 oz sweet baking chocolate
1/2 teaspoon vegetable oil


1. Heat oven to 350°F.
2. In large bowl, break up cookie dough. Using hands, stir or knead in 4 oz chocolate and the flour until well blended. Divide dough in half; cover and refrigerate one half until ready to use.
3. Shape remaining half into 18 balls. Place coconut in shallow dish; dip half of each ball in coconut to coat. On ungreased large cookie sheet, place balls coconut sides up 1 inch apart. Repeat with remaining half of dough.
4. Bake 7 to 9 minutes or until edges are set and centers are almost set. Immediately make indentation in center of each cookie with end of wooden spoon. Fill each indentation with 1/2 teaspoon frosting. Cool 2 minutes on cookie sheet; remove from cookie sheet to cooling rack. Cool until set, about 30 minutes.
5. In small microwavable bowl, microwave 2 oz chocolate and the oil uncovered on High about 1 minute 30 seconds or until chocolate can be stirred completely melted; drizzle over cookies.

Peanut Butter Filled Chocolate Cookies

One thing I love most about Christmas is the baking!  I have reason to bake and to sample.

I'm always looking for new recipes that are fun and easy, especially cookies!!

Peanut Butter Filled Chocolate Cookies
(slightly modified) - from Soy Not Oi
Cookie Dough:
1 1/2 cup flour
1/2 cup unsweetened cocoa (I used Chatfields)
1/2 teaspoon baking soda
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup Earth Balance margarine, softened
1/4 cup peanut butter
1 teaspoon vanilla extract
Egg replacer equal to two eggs (I used Ener-G)

Cookie Filling:
3/4 cup peanut butter
3/4 confectioners sugar

In a small bowl combine flour, cocoa, and baking soda; blend well. In large bowl, beat sugar, brown sugar, Earth Balance, and 1/4 cup peanut butter until light and fluffy. Add vanilla extract and egg replacer; beat well. Stir in flour mixture until blended and set aside.
In a small bowl, (preferably a vintage Pyrex mixing bowl - I’m kidding! Just seeing if you’re paying attention) combine filling ingredients and blend well. Roll into 30 one-inch balls.
For each cookie, with floured hands (I didn't do the flour and had no problems), shape about 1 tablespoon cookie dough around one peanut butter ball, covering completely. Place 2 inches apart on ungreased cookie sheet. Bake at 375 degrees for 7 - 9 minutes or until set and slightly cracked. Cool on wire racks. Makes 30.
Emmy’s Notes: I made larger cookies and baked them for about 10 - 12 minutes.

Headed East

I won't be writing Santa a letter this year.  Come to think of it, I haven't written him on in quite some decades!  I went to the post office today and dropped off one package that needs to head to east.  Wow, is it me or have the fares gone way up!  Ouch!!  I have to wonder at those prices will any kids be writing to Santa?  I love the new posters the post office had displayed though, of little kids opening an expresspost box filled with toys, while others had images of Santa's boots filled with Christmas cards and more expresspost envelopes.  I'll admit, the marketing department did well this time around.

Christmas Is Coming

I'm excited for Christmas as per every year so that's nothing new.  I'll be going through our Christmas card list this weekend hopefully... not filling out any cards yet but just checking off our list to see who will be ejected.  Only about 10 cards will be mailed out on Monday because some will travel over seas while others will travel alongside a home made ornament and a dvd. 
The decorations go up on December 3rd in keeping with our traditions by decorating on the Saturday closest to December 1st.

Christmas Shopping

Well, it's official!!!

We have officially begun our Christmas shopping.  

I know earlier I mentioned that we had shopped for toys to fill shoe box gifts for Operation Christmas Child but that aside, we have actually begun shopping for family members.  Two gifts doesn't actually put any sort of dent in our list but it's a start.

Ok so here's a recap with regards to the Project 365 that's hosted weekly by Make Music From Your Heart To The Lord.  As we pretty much all know by now, I haven't been able to post weekly because I'm a bad student but I have done better this time by actually taking some photos.  So we will just pick up where we left off last time eh!

Thursday October 27.

I took this photo of the University off in the distance.  It looked so nice lit up but unfortunately my ipod can only do so much in the dark at that distance!

Friday October 28

Husband and I were out and about and we spotted this creepy dude!  Had to get out of the car to snap the picture.  I wanted to stand beside it but I was too scared!

We picked up the new automobile and took it for a spin around the town and then the sun went down and I snapped this.

Saturday October 29

Our nephew had a small concert at his church.  I'm almost never without my ipod and since it can take video, I took this.  My nephew is the small little fella in the front row to the left in the beige shirt.  Isn't he the sweetest!!

Tuesday November 1

Already the stores are displaying the Christmas items!  I thought this row of Santas was too cute to pass up on a photo op!

While I was in the shop, I treated myself to a Brio beverage.  I haven't had one of these in such a long time.  Now this beverage brings back fond memories of when I was in the sixth grade and my eldest sister took me down town shopping.  It was somewhere in early November and we rode the bus but on the way the bus got into an accident, it skidded on the light snow covered roads and hit two cars.  At the time to me, that was the coolest thing being in the center of such action!  We managed to get downtown and went for pizza and had brio to drink!  That's why I remember this beverage... it brings back that cool memory!!

I took a kit kat break... oh it was just one of those "fun size" bars though in my opinion, there's nothing fun about the size of that bar, personally I think it's cruel.

I also had alphabits for my dinner break at work.

Friday November 4

Purchased a new mini muffin tin because I didn't have one.  I only had the regular size muffin tin.  Since I was now in posession of said tin, I had to take it on a test run so I baked oatmeal date walnut mini muffins.

I honestly can't explain why there are no photos to report between Nov.4 and Nov.11 but here's the lovely shot I took of the park.  I went to visit a friend from church and strolled through this park on the way to her home.
Sunday November 13

Today was the deadline for us to bring our filled shoe boxes in for Operation Christmas Child.  We filled 6 boxes (one for each age group in both genders).

Tuesday November 15

Caught the cookie guy making a delivery!

It was rainy and the nasty worms came crawling out.  Gross.  This one was so big it practically begged me to photograph it.  I almost threw up just looking at it! *shivers*

One thing about autumn rain, it's usually accompanied by autumn wind!  Enough to blow the leaves from the trees... so pretty.

Wednesday November 16

Up went the Christmas tree!!!  No no no, not at my house, at the store!  It's on the top floor so I had to look up.  Funny thing is I wasn't the only person photographing it!! 

Spotted a new bus shelter that hasn't been vandalized yet.  See, the kids around here are known to vandalize these things on the fly so I'm keeping watch on this one.

Right about now is the time when smart folks are putting on the winter tires and erecting the tempos to protect their driveway from snow.  We put our tires on last week but don't have to worry for a tempo thingamajig.

Completed an angel windchime for a friend at church.  She wanted me to cross stitch two plaques identical to the one I'd made her a few months back so she could give them as a gift to her best friend but I'm so overwhelmed with projects for Christmas that this was the best I could do for her... I'm sure her friend will like it!

Spotted the city workers erecting the support stands for the Manorah and Christmas Tree that will be displayed on this corner.

Can't wait to see what the tree will look like this year.

Wednesday Hodgepodge

It's Wednesday again, time for Hodgepodge!

Here are the questions for this week's Hodgepodge..
1. What song reminds you of a specific time in your life and what is it about
that song that makes you remember?

Endless Love by Lionel Richie and Diana Ross! Every time I hear this song I remember being back in high school with my first love dancing at the school dance. He said that was our song and what can I say I was young and really unbelievably stupid naive to believe we'd last forever. Come to think of it I should thank him now because if we'd have lasted, I wouldn't be married to Prince Charming now!

2. What's something you've given up on?

I've given up on old resentment. You know, I used to always bring up things from the past and hold on to the anger and frustration of it all and be so full of resentment until one day I just said enough is enough and stopped. I let go of all that negativity and opted to focus my attention on positive things. I just can't waste any more of my life's energy on being filled with hate. Get behind me Satan and stay there!

3. What's something you'll never give up on?

I'll never give up on striving to be a better person...

4. If you had to cook something from scratch in the next hour what would it be?

Peanut butter cookies. I can cook those quickly, then again they only call for 3 ingredients (peanut butter, sugar and an egg). The question is will I share them when I'm done?... oh um... let me re-read my response to question #3, yup I guess I will share them then eh!

5. Have you started Christmas shopping? Decorating? Listening to Christmas music?

Last week I shopped to fill six shoe boxes for Operation Christmas Child so technically yes I did start Christmas shopping. I haven't decorated anything yet, but I am guilty of listening to Christmas music for the past 3 weeks every now and again on my ipod.

6. What do you know about your parent's wedding?

I know it was a long time ago....that's pretty much it!

7. I can't believe I _____________.

I can't believe I took up jogging this summer! I actually got off my lazy couch potato butt and went out jogging! Had to call it quits with the sun rising later since I went when I got home from work at the crack of dawn but now I've taken up pilates.

8. Insert your own random thought here.

We've made it to the middle of November and still haven't received any snow... very happy about that too I may add. Our temperatures are fairly mild, not much rain but enough to help strip the trees of their leaves but no snow... having said that, I wouldn't be surprised if I just jinxed us which would be bad since I still haven't purchased any winter boots, much to my mom's dismay. Shh... don't tell her.

I've Never Done

The other night I was next-blogging my way around blogger and stumbled into Café Chick's blog.  I had a great time reading her blog!  While I was there I stole swiped copied borrowed this great blog idea about things I've never done but would or wouldn't like to do in what remains of my lifetime.  Click here to read Café Chick's list.

Things I've never done but would like to do someday:
  • Learn to drive.  Right now I can drive husband crazy but he wants me to learn to drive the car.
  • Visit the Holy Land. Maybe we'll catch one of those cruises that tour the Holy Land with one of the tv shows we watch. 

Things I've never done and feel indifferent about doing:
  • Throw away clothes or books.  I've always given used clothing to the Salvation Army or a local church bazar unless it was torn or unwearable.  There's always someone who can get another wearing out of a used article in good condition.  And books should always be donated to used bookstores or local hospitals book stores but never chucked in the trash! 
Things I've never done and have no interest in ever doing:
  • Watch Star Wars.  I am probably the only person on planet Earth who hasn't seen any of the Star Wars movies.  Husband used to have the videos but can't find them (it wasn't me).
